Dal khaman
Dal khaman is a popular and delicious snack that originated in the Indian state of Gujarat. It is made from steamed and tempered lentil cakes that are flavored with tangy and spicy ingredients. Here's a simple recipe for making dal khaman at home:
Ingredients:
For the khaman batter:
1 cup gram flour (besan)
1/4 cup semolina (sooji)
1 tablespoon ginger and green chili paste
1/2 teaspoon turmeric powder
1 teaspoon sugar
1/2 teaspoon baking soda
Salt to taste
1 cup water
1 tablespoon lemon juice
1 tablespoon oil
For the tempering:
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon sesame seeds
1 teaspoon cumin seeds
2-3 green chilies, chopped
1/4 cup water
2 tablespoons chopped coriander leaves
For garnish:
Grated coconut
Chopped coriander leaves
Instructions:
In a mixing bowl, add besan, sooji, ginger-green chili paste, turmeric powder, sugar, baking soda, salt, lemon juice and oil. Mix well.
Add water gradually and mix to form a smooth and thick batter. Keep it aside for 10 minutes.
Grease a 7-inch round cake pan with oil and keep it ready.
Heat water in a steamer or a large pot.
Add a pinch of baking soda to the batter and mix well.
Pour the batter into the greased pan and steam it in a steamer for 15-20 minutes or until a toothpick inserted comes out clean.
Once done, remove from the steamer and allow it to cool down for 5-10 minutes.
Cut the khaman into small squares or diamond shapes.
In a small pan, heat oil and add mustard seeds, sesame seeds, and cumin seeds. When they splutter, add chopped green chilies and 1/4 cup water.
